Family brewing rice wine method
1. Steamed rice: Take 10 kg of rice or glutinous rice, soak it in clean water and soak it for 10-12 hours. After filtering, place the rice in a steamer and steam it for about 40 minutes. Then remove it and allow it to cool to 32-37°C.
2, saccharification: Take Daqu or Xiaoqu about 150 grams, chopped and evenly mix in the rice, and then into a clean small tank for saccharification, saccharification, the cylinder head cover tight, in order to facilitate the insulation and moisture evaporation less. It takes 12-15 hours to maintain the temperature at 28-30°C.
3. Fermentation: Take about 13 kilograms of cold boiled water, pour into the rice cylinder, cover the cylinder surface for fermentation, and keep the temperature at about 20°C for about 10 days at room temperature.
4. Clarification: Raw rice wine is obtained by filtering and clarifying the fermented rice vinegar.
5. Sterilization: Put the raw yellow wine in the pot and cook it at 80-85°C with gentle heat, and keep it for 20-30 minutes.
6. Storage: The well-sterilized rice wine is filled with ceramics. If it is to be stored for a long time, the altar mouth should be sealed tightly, covered with moist plastic cloth, sealed tightly with a rope, and stored for several decades without deterioration.
