1. Selection of materials, dressing: Choose abalone mushrooms with normal color, no pests, spots, and severe mechanical injuries as raw materials. Stainless steel knives were used to remove wood chips, cottonseed husks and other impurities from the base of the mushroom stalk, and to maintain the completeness of the slicing surface.
2. Rinsing, grading: The fresh mushrooms that have been trimmed are soaked in clean water and rinsed clean. The whole mushroom is divided into two grades according to the diameter of the cap, 3 to 5 cm, and 5 to 6 cm. More than 6 cm of the mushroom body is torn into 2 to 3 pieces, and its size is 3 to 4 cm.
3. Pre-cooking, cooling: According to mushroom water ratio of 1:1 in a sandwich pot or aluminum pot boiled for 2 to 3 minutes (to the center of the mushroom body for the degree of maturity). Precooked mushrooms will be picked up, quickly cooled in water. Precooked water is reserved for soup preparation.
4. With soup: pre-cooked mushrooms 97.5%, 2.5% salt, boiled with four layers of gauze filter, as a soup reserve.
5. Canning: Cans use a rotating glass bottle. When canning, the whole flower and flaky mushroom can be divided into grades, and the size of the same can is required to be uniform. After the canning, the hot soup is added until it is substantially full, leaving a top gap of 0.8 to 1 cm.
6. Exhaust and seal: The exhaust is heated and drained. When the central temperature of the can reaches 80°C, it is sealed with a rotary bottle cap.
7. Sterilization, cooling: Sterilize with heat, then immediately put it into cold water and cool it to about 38°C. Wipe the surface water traces of cans and check the storage.
