Quinoa Pasta Stir Fry
Well, hello there! We kicked off the year with a bang—though not without making some changes around here. Meat and Dr. Pepper are officially MIA from our kitchen. The Dr. Pepper thing? A tough adjustment, but hey, life’s all about growth, right? On the bright side, I’ve been discovering some amazing plant-based recipes lately. One of them blew up when I shared it on social media recently—so many people asked for the recipe that I figured it deserved its own little spotlight.
This dish is simplicity at its finest: quick, easy, healthy, and absolutely delicious. Two things I always look for in a meal! I decided to try something new with quinoa flour pasta, which is made entirely from quinoa and whole wheat flours. Paired with whatever veggies were lurking in my fridge (and yes, that mysterious can of water chestnuts hiding in the pantry), it turned out to be a total winner.
Quinoa Pasta Stir-Fry Recipe:
Start by cooking one box of quinoa pasta according to the package instructions. I used a gallon of water because the box said so, but I suspect we could’ve gotten away with less. Once cooked, drain and set it aside.
In a separate pan, heat up some olive oil and sauté minced garlic, thinly sliced green peppers, chopped carrots (I had a bag of baby carrots that needed using up, but regular ones work just fine), sliced water chestnuts, and celery sticks until they’re tender but still crisp. Remove them from the pan and put them aside.
Now, throw the drained pasta back into the same pan, add a bit more olive oil, and stir-fry it for about a minute to give it that extra flavor boost. Toss the veggies back in, mix everything together, and season generously with salt, pepper, and perhaps a splash of hoisin or soy sauce for an extra umami kick. Adjust seasoning to your liking—it’s all about personal preference!
Pro tip: If you’re feeling adventurous, throw in some fresh herbs like cilantro or basil for an added layer of flavor.
