How is ebony processed?

Wumei, also known as Chinese plum, is a unique product that serves both medicinal and culinary purposes. It is one of the most commonly used traditional Chinese herbs after being processed. With a warm and sour flavor, Wumei helps to nourish the body's vital energy, quench thirst, strengthen the lungs, and tighten the intestines. It is particularly effective in treating conditions such as lung deficiency, coughing, dry mouth, excessive thirst, dysentery, chronic diarrhea, and even biliary tract worms. The best time to harvest Wumei is in mid-May when the fruit is nearly ripe—its color changes from green to a blue-yellow hue. Once picked, the plums are sorted by size and evenly placed in a specially prepared oven. Charcoal is used as the fuel source. The initial baking is done at around 60°C for one hour, followed by a slow bake at approximately 50°C for 24 hours. After this, the plums are carefully turned to prevent the skin from breaking. They are then left in the pot for a day before being baked again at 50°C for another 24 hours until the flesh becomes shriveled and dark brown. To achieve the deep black color typical of black ebony, dried Wumei can be stacked for 3 to 5 days, allowing the color to gradually darken. Alternatively, a small amount of oil pine wood can be added to the charcoal fire, creating smoke that enhances the blackening effect. It is important to note that coal should not be used as a fuel during this process, as it may release harmful gases that could contaminate the final product. Beyond its medicinal value, Wumei is also used to make Wumei juice, which has a color and texture similar to black ebony. A well-known example is the Beijing Osmanthus Wumei Soup, a popular summer health drink. Today, products like Wumei juice packaged in flexible pouches or cans have gained widespread popularity both domestically and internationally, appreciated for their natural taste and health benefits.
