Wumei, also known as Prunus mume, is a unique product that combines both medicinal and culinary uses. It is a processed form of the Chinese herbal medicine, known for its warm and sour taste, which helps to nourish the body's fluids, quench thirst, and strengthen the lungs. Wumei is commonly used to treat conditions such as lung deficiency, coughing, dry mouth, excessive thirst, dysentery, chronic diarrhea, and even biliary tract worms.
The best time to harvest Wumei is in mid-May when the fruit is about 80% mature—its color changes from green to a blue-yellow hue. Once picked, the green plums are sorted by size and evenly placed in a specially prepared oven. Charcoal is used as the fuel source. The initial baking starts at around 60°C for one hour, then it is reduced to about 50°C and left to bake for 24 hours. Afterward, the plums are carefully turned to avoid breaking the skin. They are then left in the pot for a full day before being rebaked at 50°C for another 24 hours until the flesh shrinks and turns brown.
To achieve a deep black color, dried Wumei can be stacked for 3 to 5 days, allowing the color to gradually darken. Alternatively, a small amount of oil pine wood can be added to the charcoal fire during baking, producing smoke that enhances the blackening effect. It’s important to note that using coal as fuel is not recommended, as it may release harmful gases that could contaminate the final product.
Beyond its medicinal value, Wumei is also used to make Wumei juice, which has a dark, rich color similar to the fruit itself. In Beijing, a popular summer drink called "Osmanthus Wumei Soup" is well-known for its refreshing properties. These products, often packaged in flexible pouches or cans, have gained popularity both domestically and internationally due to their health benefits and convenient packaging.
